Jicama-Berry Salad With Shallot-Mint Vinaigrette

Ingredients:

 

romaine leaves and/or white kale

2

cup

sliced strawberries

1

cup

peeled jicama cut in julienne strips

3

tbsp

white whine vinegar

3

tbsp

orange juice

2

 

shallots, finely chopped

1

tbsp

snipped fresh mint or 1 teaspoon dried mint, crushed

1

tbsp

olive or salad oil

 

 

dash of salt-free seasoning blend


Cooking Instructions:

  1. Line 4 salad plates with romaine and/or kale. Arrange strawberries and jicama on top.
  2. For dressing, in a screw-top jar combine vinegar, orange juice, shallots, mint, oil and seasoning blend.
  3. Cover and shake well.
  4. Drizzle dressing over salads.
  5. Garnish with whole strawberries, if desired.
