Salty Scottish Oatcakes
Ingredients
1 3/4 cups regular oatmeal
1/4 tsp of baking powder
1/2 tsp salt
1 tablespoon butter (melted)
5-8 tsp hot water
Instructions
- Preheat oven to 350 degrees.
- Half a cup at a time, pulverise 1 cup of the oatmeal at high speed in a blender jar. Combine pulverised oatmeal, baking powder, and salt in bowl and stir in melted butter. When all butter has been absorbed, add hot water a teaspoon at a time, stirring constantly to make a smooth, firm paste.
- Gather mixture into a ball and put on table which has been lightly sprinkled with remaining 1/4 cup of oatmeal. Roll ball into the oatmeal until it is covered with flakes. Spread 1/4 cup more oatmeal over the table. With a rolling pin, flatten the ball out into an 8-inch circle about 1/8 of an inch thick. Cut circle into 8 pie shaped wedges. Scatter last 1/4 cup oatmeal onto baking sheet and carefully place wedges on sheet.
- Bake for a bout 15 minutes. When wedges are light brown, turn off heat and open door for about 4 to 5 minutes until they become firm and crisp.
- Traditionally served with herring or cheese.
