What do you need?
2 cups sifted all-purpose flour
2 tbs. sugar
4 tsp. baking powder
1 tsp. salt
2 well beaten egg yolks
2 cups milk
2 tbs. butter/margarine, melted
1 cup finely chopped apple, peeled and cored
2 stiffly beaten egg whites.
In a large non-metal bowl, sift together all the dry ingredients.
In a smaller bowl, combine the milk and egg yolks.
Pour the mixture into the dry ingredients and stir well.
Stir in the butter/margarine and apple and fold in the egg whites.
Let the batter set up for a few minutes.
Cook on a hot griddle or in a large frying pan, using 1/3 cup of batter per pancake. Use a spatula or spoon to spread batter evenly.
Remove from heat, dot with butter, sprinkle with powdered sugar, and roll up into log. Top with slightly heated applesauce and a dash of cinnamon.

Pagan Apple Cake Oven to 350 Apple Mixture 4-6 Apples ( I use Granny Smith apples) Peel Core and slice them thinly 3 Tablespoons of sugar ( I prefer brown sugar) 2 Tablespoons of Cinnamon Sprinkle of Allspice Sprinkle of Cloves Sprinkle of Nutmeg Touch of Mace Touch of Ginger Season to taste with any combination of these spices...you can also add dried cranberries or nuts to this mixture too. Pour Spices and sugar over apples – shake them until coated well Batter 3 Cups Flour 2 ½ Cups of Sugar (I use 1 cup of white sugar, the rest brown sugar) 1 Cup Wesson Oil 4 Eggs ½ Teaspoon Salt ½ Cup of Orange (use something not too sweet) 2 ½ Teaspoons of Vanilla 3 Teaspoons Baking Powder
Procedure
Mix all batter ingredients together well with a mixer. Pour half batter in a bundt type pan, layer in half the apple mixture. Pour remaining batter over apple layer and layer remaining apples over that. Bake in 350 degree oven for 1 ½ hours…until a toothpick comes out clean. Cake will look a little brown and crispy on top…this is normal. Enjoy!!!!!

1 pound Italian Sausage, browned and drained
1 Box Jiffy Corn muffin mix (or homemade cornbread), prepared like cornbread and cooled
2 eggs, beaten
3 slices white bread, torn
1 (16 oz) can of chicken broth
2 stalks celery, chopped
2 cloves garlic, minced
1 medium onion, chopped
1/2 cup chopped mushrooms
1 green bell pepper, chopped
1/2 cup melted butter
1/2 cup cheddar cheese
1 teaspoon Italian seasoning
Procedure
Brown sausage with onion, garlic, celery, mushrooms and pepper. Drain all grease.
In a large bowl combine white bread pieces and cornbread (use hands to split into small pieces--like white bread). Add eggs and butter. Mix well, coating bread. Add seasoning. Add cheese and meat mixture. Mix well combining all the ingredients. Add chicken broth--first one cup, then by 1/3's until mixture is moist but not soggy. Spread evenly in an 8x8" lightly greased (or use cooking spray--I do) pan. Place in oven at 350 degrees for 30 minutes. Sprinkle lightly with cheese and replace until stuffing browns and cheese melts. If stuffing is dry after 15 minutes of baking, add more chicken broth.

5 egg yolks
3/4 cup sugar
1 teaspoon real vanilla extract
1 cup sifted or lifted all-purpose flour
1 teaspoon baking powder
5 egg whites
3/4 cup heavy whipping cream
2 tablespoons brandy
1 pound coating (milk or dark) chocolate
Procedure
Preheat oven to 375 degrees. Line a jelly roll pan with parchment paper. Spray lightly with oil. Beat egg yolks until light colored and then beat in sugar gradually. Add vanilla. In another bowl, whisk together the flour and baking powder and beat into the egg yolks until smooth. Beat the egg whites until stiff but not dry and gently fold them into the cake batter. Spread into baking pan and bake 10-13 minutes. Loosen edges from the pan and invert the pan onto a clean towel that has been dusted with powdered sugar. Trim off any crusty edges. Roll the cake while it is still hot with the towel and place on a rack to cool. In meantime, combine in a batter bowl the cream and brandy. Pour over the chocolate pieces. Microwave on high 1 minute. With a rubber spatula, stir to see if it has all melted. If not, add another 30 seconds. Stir again until melted. Unroll the cooled jelly roll and gently spread this mixture over the cake. Roll and place the cake on the seam on a serving plate. With a serrated knife, slice off about a 2 inch piece, on an angle, from one end. Place this on top of the roll. Frost with chocolate buttercream frosting, building the frosting up around the sides of the knothold but do not cover the top of the knothole, and working the frosting under the roll as possible. Using a knife or other tool, make marks in the frosting to resemble the texture of wood bark. Decorate with cherries or cranberries and candy leafs, if desired.

2 Cups heavy cream
2 cups half and half
3/4 Cup of sugar
4 egg yolks, beaten
2-3 inch vanilla bean (or 2 tsp vanilla extract)
an ice cream freezer
Procedure
Heat cream, half and half and sugar in heavy saucepan, stirring 2-3 times until sugar melts and mixture heats. Beat egg yolks in a small bowl. Pour some of hot cream into yolks, beating to mix. Add yolks to hot cream. Cook, stirring constantly over medium heat, until mixture thickens slightly, about 8 minutes. Do not boil. Pour into a clean bowl. Cut vanilla bean open and scrape seeds into hot mixture, stir well. Cover and chill. Stir before pouring into ice cream freezer. Follow freezer directions for freezing your ice cream.
Ingredients
8-10 10 inch tortillas
1 chopped bell pepper
1 chopped small onion
1 pkg Sargento Mexican style grated cheese (2 Cups)
Procedure
Fry onion and pepper in a tbsp of olive oil until onion is clear. Remove from heat and cool slightly.
On a tortilla, cover half with cheese and onion/peppers. Fold over. Fry in a large pan coated with nonstick spray, until cheese melts and tortilla begins to brown. Repeat with remaining tortillas. Cut into triangles. Serve with lettuce, tomato, salsa and sour cream.

6 eggs--hardboiled, peeled and chopped
1 medium onion-chopped
2 stalks celery-chopped
2 Tbsp. prepared yellow or Dijon mustard
two drops green Tabasco
1 1/2 - 2 Cups Regular (NOT LIGHT!!) Mayonnaise
Salt and Pepper to taste
2 shakes of cracked red pepper (about 1/8 tsp.)
Procedure
Place eggs, celery and onion in bowl. Add red pepper, Tabasco and mustard. Lightly mix together. Stir in Mayo until you get a consistency you like. Add salt and pepper if you prefer. Best when served on Potato Bread.

Ingredients
1 cup flour
3 teaspoons baking powder
1 tablespoon sugar
1/4 teaspoon salt
1 egg
1 tablespoon honey
1 tablespoon rose water (gently boil the petals of two fresh roses in 1/4 inch water until the leaves are translucent. Strain, cool. Store in refrigerator.)
2 tablespoons almond oil (extra for the griddle)
dash of cinnamon, if desired
Procedure
Mix the flour, baking powder, sugar and salt in a medium sized bowl. Beat the eggs, honey, rose water, and oil in a small bowl. Stir the egg mixture into the flour mixture. Oil the griddle and heat until drops of water bubble and dance. Pour a small amount of batter on griddle, fry until the edge is bubbly and dry; flip and cook until golden brown. Serve with fresh strawberries and whipped cream, or butter and syrup.

Ingredients:
3/4 C. butter
1 C. packed brown sugar
1/2 C. granulated sugar
1 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. cinnamon
1 egg
1 tsp. vanilla
1 3/4 C. all purpose flour
2 C. rolled oats
Procedure:
In a large bowl beat butter on high speed for 30 seconds. Add sugars, baking powder, baking soda and cinnamon. Beat until well combined. Add egg and vanilla. Beat in as much flour as you can with a mixer. Add the rest, mixing by hand. Stir in the oats. Drop by rounded teaspoons 2 inches apart on an ungreased cookie sheet. Bake at 375 degrees for 10-12 minutes. Cool on a wire rack. Makes about 48 cookies.

4-5 Crisp Hard, Tart Apples (Granny Smith or Staymen's work well) 1 Cup of Dried Cranberries 2 Tbl Lemon Juice 1/2 Cup Brown Sugar or to taste 1 Tbl Cinnamon 1 Tsp Allspice 1 Tsp Ground Cloves Mace - pinch Ginger - pinch (makes it HOT - use carefully) Nutmeg - pinch or two *If serving as a vegetarian dish, you can add a cup or so of chopped walnuts to add protein or if you just like walnuts!
Procedure
Cut apples into cubes place in a large bowl (I leave the skins on - your preference) Add cranberries Start with half a cup of brown sugar that usually works for me...but sugar to your taste adding more or less as you prefer Add spices - tasting as you go...(I usually combine spices in a small cup and taste them as I am combining until I like the way it tastes...its all personal preference here. Combine all ingredients...refridgerate until chilled...serve OR Microwave for about 3 minutes and serve warm

Procedure
Beat egg and wine in medium bowl. Combine flour, salt, cinnamon and sugar in a small bowl. Stir into the egg mixture. Let stand 30 minutes. Combine Honey and nutmeg in a small bowl. Heat 1/2 inch oil in a frying pan until hot, but not smoking. Drop the batter into the oil, one tablespoon at a time; fry until golden brown. Drain on paper towels. Dip into honey mixture. Procedure
Place apple juice, orange juice, honey, rose water, and thyme in a blender. Mix well. Pour this mixture into a bowl, then slowly add soda water. Stirring about 12 ice cubes and whole fruits. Your favorite bread recipe, I prefer cinnamon raisin. Melted butter--about a half cup
Procedure
I use a bread machine, although you certainly don't have to. After my machine has needed the dough, I remove it from my machine and place on a heavily floured surface. Separate the bread into 3 balls, 1 smaller then the others. Set the small one aside. This will be the head. Shape one of the larger balls into an oval or oblong shape for the body. Separate the other ball into four pieces, shaping them into small ovals. These will be arms and legs. Attach to the body with a bit of butter and by pinching the dough together where they meet. Attach the head. Place on a lightly greased cookie sheet. Brush with butter or egg whites (if you prefer). You may wish to decorate your "man" with raisins or other fruits for eyes, nose, etc. Feel free to do so. Let the dough rise in a warm spot for about 30-45 minutes, or until it has doubled in size. Bake in a 350 degree oven for 45 minutes to an hour--until golden brown.
Serve during Mabon as tribute to the God.

1 cup chopped Zucchini
1 onion, chopped
3 cloves garlic, minced
3-4 Tbsp Olive Oil
1 Cup celery, chopped
1 Cup carrots, chopped
1/2 lb. mushrooms, chopped
1/2 Cup green bell pepper, chopped
2 16oz cans whole tomatoes, chopped
1 6 oz can tomato paste
2 tsp. chili powder
1 tsp. salt
1/2 tsp. oregano
2 16oz. cans pinto beans
Procedure
Cook onion and garlic in olive oil until tender. Add chopped fresh vegetables. Cook and stir for 5 minutes. Add tomatoes and seasonings. Bring to a boil; cover and simmer 10 minutes until vegetables are tender but crisp. Add beans and heat until boiling. Simmer 5 minutes. Serve with Bread Man (if not a fruit bread).

2 C. sifted all purpose flour
3 tsp. Baking powder
1 tsp. salt
2 tsp. sugar
1/4 C. shortening
1/2 C. milk
1 slightly beaten egg
Procedure
Sift together flour, baking powder, salt and sugar. Cut in shortening, until mixture is crumbly. Stir in milk and egg, making a soft dough. Roll out onto a lightly floured surface. Kneed lightly. Roll/pat out until evenly spread at about 1/4 inch thickness. Using a knife, or cookie cutter, cut into Crescent Moon shapes. With a sharp knife carve runes or symbols of your hopes for the next month in the tops of the crescents. Place on an UNgreased cookie sheet and bake at 450 degrees for 10-12 minutes, until golden brown. These are best when warm, so make them just before your ritual. You can adapt them for the wheel of the year! Winter:sprinkle powdered sugar for snow Spring: maybe some orange rind or pastel colored sprinkles you can find in the baking section at the grocery store. Summer:add some parsley for flecks of green throughout your cake, or maybe some green edible glitter. 4 C. all purpose flour
1 pkg. active dry yeast
1 snack size box raisins
1 C. milk
1/3 C. sugar
1/3 C. butter
1/2 tsp. salt
2 eggs
1 tsp. vanilla
3 Tbsp. melted butter
1/2 C. sugar
2 tsp. ground cinnamon
1 recipe cream cheese frosting
Procedure
Into a bread machine combine the flour, 1/3 C. sugar, milk, salt, vanilla, eggs, yeast and 1/3 C. butter. Set on a 2 pound dough setting and let the machine do all the hard work. *lol* After machine goes through the cycle, roll dough out (in large rectangle) onto a well floured surface. Preheat your oven to 375 degrees. Brush the dough with the melted butter. Combine 1/2 C. sugar and cinnamon. Cover the dough well with this mixture. Spread raisins evenly (if desired) over the dough. Roll tightly, pinching the ends and seams to seal. At 1 inch intervals cut roll with dental floss or thread (place under roll and cross ends over roll). Place in a greased dish with rolls touching. Let rise in warm place for 30 minutes. Bake for 20 minutes. Frost while still hot.
Ingredients
1 C shortening OR 1/2 C. shortening and 1/2 C. Butter 1/3 C. sugar 2/3 C. blanched almonds 1 and 2/3 C. flour 1/4 tsp. salt 1 C. confectioner's sugar 1 tsp. cinnamon
Procedure
Mix shortening, sugar and almonds. Sift together flour and salt then stir into almond mixture. Chill dough at least 1 hour. Break off pieces and roll pencil thin. Cut 2 and 1/2 inch lengths and form into crescent shapes with fingers. Bake at 325 degrees on an UNgreased cookie sheet until set, but not brown, about 14-16 minutes. Cool on pan, and while slightly war, dip each into sugar and cinnamon. Makes about 5 dozen
