Dandelion Wine
Pour boiling water over the freshly-picked blossoms. Let stand
3 hours. Strain the liquid into a large cooking pot and add sugar
to the liquid. Cook over medium heat 15 minutes. Place orange
and lemons in a 2-gallon (7.6 litre) container. Pour the hot liquid
over the fruit. When cooled to 100 degrees F. (37 degrees C.) remove
1 cup (240 ml) and disolve the yeast in it, then add to the rest.
Let stand 12 hours and strain. Return mixture to the container, cover
with layers of cheesecloth and let stand at room temperature for two months.
Filter, bottle, cap, and store in a cool place. In six months, strain
into bottles and sample.
