Sauced Apple Cake
The brandy soaked apples add a special touch to this holiday cake!!

4     cups apples, peeled and chopped
6     tablespoons brandy
2     cups sugar
1/2  cup cooking oil
2     eggs
2     cups all-purpose flour
2     teaspoons cinnamon
2     teaspoons baking soda
1     teaspoon nutmeg
1     teaspoon salt
1/2  teaspoon cloves
1     cup chopped walnuts
1     cup raisins
Combine apples and brandy and set aside. blen sugar, oil, and eggs. Add flour and spices. The batter will be thick and dry. Mix in nuts and raisins. Add apple mixture and mix well. Pour into greased tube pan. Bake 350 degrees F. for 1 hour or until done.

NOTE: Serve warm or cold, with or without, whipped cream.

Preparation: 30 minutes

Cooking: 1 hour     Can do ahead

Chunky Apple Cake
There are chunks of apple in every bite!!

1     cup sugar
1/2  cupbutter or margarine
1     egg
1/2  teaspoon vanilla
3     cups apples, peeled and diced
1/2  cup chopped walnuts
1     cup all-purpous flour
1/2  teaspoon each: cinnamon,
baking powder, baking soda,
salt, and nutmeg.
Cream sugar and butter. Add egg and vanilla and mix with electric mixer. Add apples, nuts, and dry ingredients. Mix well. Spread into greaded 9-inch square pan. Bake at 350 degrees F. for 45 minutes.

Preparation: 30 minutes
Serves: 9
Cooking: 45 minutes     Serve immediately

Chocolate Bread with Honey Butter


 
Bread:
1     cup sugar
1/2  cup margarine, softened
2     eggs, beaten
1     cup buttermilk
1  3/4cups unbleached flour

Butter:
1/2  cup butter, softened
2     tablespoons chovolate syrup


1/2  cup cocoa
1/2  teaspoon each: baking powder,
salt, baking soda
1/2  cup chopped walnuts or
pecans (optional)
 

2     tablespoons honey

Bread:  In a large bowl, cream sugar and margarine. Add eggs and buttermilk. Mix well. Sift the dry ingredients together. Add to liquid mixture, stirring until the dry particles diappear. Stir in nuts. Pour into greased 9x5-inch loaf pan. Bake at 350 degrees F. for 55-60 minutes. cool upright in pan for 15 minutes. Then remove from pan and cool completely.

Butter:  In a small bowl, combine all ingredients. Beat with mixer at highest speed until light and fluffy. Serve with bread.

Preparation: 20 minutes
Yeild: 1 loaf
Cooking: 55-60 minutes     Can be frozen

Oatmeal Chocolate Chip Cake
A food dessert to take to a party!!

1     cup quick oats
1  3/4cups boiling water
1     cup sugar
1     cup brown sugar, firmly packed
1/2  cup margarine, softened
2     large or 3 medium eggs
1  3/4cups all-purpose lour
1     teaspoon baking soda
1/2  teaspoon salt
1     tablespoon coca
1     (12 ounce) package semi-sweet chocolate chips
Soak oats in boiling water for 10 minutes. Stir in sugars, mararine, and eggs. Add flour, baking soda, salt, and cocoa, Stir in half of chocolate chips. Pour into greased and floured 9x13-inch pan. Sprinkle remaining chips on top. Bake at 350 degrees F. for 40 minutes.

Note: You may want to sprinkle chopped walnuts on top ors serve with whipped cream or ice cream.

Chocolate Date Cake


 
Cake:
1     (8 ounce) package
chopped dates
1  1/4cups boiling water
1/2  cup shortening
1     cup sugar
2     eggs

Topping:
1/2  cup sugar
6     ounces chocolat chips, sweet or unsweetened


1  1/4cups plus 2 tablespoons all-purpose flour
1     tablespoon cocoa
1     teaspoon baking soda
1     teaspoonvanilla
 
 

1/2  cup chopped pecans

Cake:  Mix dates and water. Let cool. Cream shortening and sugar. Add eggs, one at a time, beating after each addition. Add flour, cocoa, and soda in 1/3 portions alternating with liquid from the dates. Stir in dates and vanilla. Batter will be thin. Pour into greased and floured 9x13-inch pan.

Topping:  Sprinkle on topping in order listed. Bake at 350 degrees F. for 35-45 minutes.

Variation:  Substitute butterscotch chips for chocolate chips in the topping.

Preparation: 40 minutes

Cooking: 35-45 minutes     Can be frozen

Coconut Pound Cake


 
1     cup butter
3/4  cup shortening
3     cups sugar
5     eggs
3     cups all-purpose flour
1     teaspoon baking powder
1     cup mild
2     teaspoons vanilla
1  1/3cups coconut
Cream butter, shortening, and sugar together. Add eggs, one at a time beating after each addition. Add flour, baking powder, milk, vanilla, and coconut. Mix until well blended. Pour into a greased and floured 10-inch tube pan. Bake 350 degrees F. for 1 hour. Cool. Turn onto serving plate.

Preparation: 30 minutes
Serves: 12-16
Cooking: 60 minutes     Can be frozen
