Healthy Cookies & Snacks




Oatmeal Cookies


�1 1/2 cup whole wheat pastry flour 
�1 cup rolled oats 
�1 1/2 tsp. baking powder
�1/4 tsp. salt 
�1 tsp. cinnamon 
�1/3 cup canola oil 
�4 tsp. cornstarch mixed into 1/2 cup soymilk or water
�3/4 cup sugar
�1 tsp. vanilla 
�1/2 cup coconut 
�3/4 cup vegan chocolate chips (optional) 

Mix canola oil, cornstarch mixture, sugar, vanilla, and coconut well in a 
good-sized bowl. 
In a seperate bowl, sift flour, cinnamon, salt, and baking powder together. 
Add oats to this mixture. 
Add the dry mixture to the wet one and mix well. 
Mix in chocolate chips. 
Form the dough into small balls on a greased cookie sheet. 
Bake at 350  Farenheit for about 10 minutes, or until they are done when 
tested with a toothpick. 

Serves: about 6 

Preparation time: 20 minutes 



Apple Crisp


�6 cups apples (or comb. of any fruit**), chopped 
�1 tsp. cinnamon 
�1 1/2 Tbsp. whole wheat flour 
�6 Tbsp. maple syrup 
�1 cup whole wheat flour 
�1/2 cup oat flakes 
�1/4 tsp. sea salt 
�1/4 tsp. baking soda 
�1/3 cup margarine 

** If you use rhubarb, add 1/2 cup more maple syrup** 

Toss apples with 1/4 tsp. cinnamon and 1 1/2 tbsp. flour in baking dish. Drizzle
 with 3 tbsp. maple syrup. Combine flour, oats, salt, soda and rest of cinnamon. 
Cut in margarine and drizzle on rest of maple syrup. Mix with a fork and spread
 over apples. Bake 45 minutes at 350 ( or until apples are tender) 

Apple and rhubarb make an awesome combination. Try adding in some other
 fruits too, blueberries, peaches..... 



Applesauce Leather


�  2 apples, peeled, cored and chopped. 
�  1/4 cup lemon juice 
�  1/2 cup sugar  
�  1 tsp cinnamon 

Simmer apples over medium heat about 20 minutes or until very soft. 
Place in blender and add the other ingredients. 

Dehydrate in a dehydrator or in oven. To dry in an oven just set temp at lowest 
possible setting --about 140 degrees would be good. Dry until fruit feels leather 
like; yet pliable. This would probably best be done on parchment paper. 
Remove the leather while it is still warm and roll it up.


Applesauce Oatmeal Drops


�  1/4 c brown sugar 
�  1/4 c white sugar 
�  3/4 c natural unsweetened applesauce 
�  1 c sifted all purpose flour 
�  1 tsp baking powder 
�  1/2 tsp salt �1 c rolled oats 
�  1/2 c seedless raisins 

Mix sugars and add applesauce. Sift together dry ingrediants and stir in. 
Add oats and raisins. Drop by spoonfuls onto lightly greased cookie sheet. 
Bake at 375 degrees about 10 minutes. 



Raspberry Chocolate Chunk Cookies


�  1 cup flour 
�  2/3 cup brown sugar, packed 
�  6 tbsp. soy margarine 
�  2/3 cup oatmeal 
�  2/3 cup coconut 
�  2 3oz Cloud 9 Raspberry Chocolate bars, broken in chunks 
�  1 tsp vanilla 
�  2 tsp baking powder �dash salt 
�  soy milk 

Cream softened margarine with brown sugar. Add all other ingredients except 
soy milk. Pour soy milk into batter, maybe about 1/3 cup to start, and mix. Add 
soy milk as needed until batter is blended but still thick. Don't over mix. Drop
blobs of the batter onto a cookie sheet,. You should have about 18 cookies. Cook 
in a preheated oven, 350 degrees until cookies are golden, about 15 minutes. 

Serves: 18 - 20 


Baked Pita Chips


�6 whole wheat pitas
�olive oil
�spices (your choice)

Cut pitas in half AROUND THEIR CIRCUMFERENCE (so you end up with two flat round halves from each pita). Brush each pita round with olive oil and cut into eight wedges. Arrange wedges on baking tray and sprinkle with spices (you can use any combination....such as coriander, paprika and garlic powder/salt and serve these with Hummus, or other combinations, all are good - especially rosemary and garlic!!! Tailor the spices to your liking or to complement an accompanying dish).

Bake the chips at 375 for about 5 - 7 minutes or until browned. Be careful...they tend to cook quickly.

Serves: 96 chips

Banana Oat Cookies


�2 cups mashed bananas
�2 cups caster sugar
�2 cups brown sugar
�2T egg replacer + 1/2 cup water
�2 tsp. vanilla
�1 tsp. salt
�2 tsp. baking soda
�4 cups flour
�5 cups oats
�4-7 cups any combination of: raisins &/or dates

Cream bananas and sugars. Add egg replacer & water and beat thoroughly. Add in vanilla, salt, baking soda, flour, and oats, beating at medium speed after each addition. Stir in other ingredients. Press golf ball size scoops onto greased baking sheet 2" apart. Bake at 400 degrees F for 8-10 minutes or until brown. Cool completely before munching.
