JERRY'S EASY SPINACH LASAGNA


1 pound ricotta cheese
2 cups mozzarella cheese shredded
1 each egg
1 pkg. frozen chopped spinach thawed
1 tsp. salt
1 tsp. oregano
1 dash pepper
32 ounces spaghetti sauce
9 each lasagna noodles uncooked

In a large bowl, mix ricotta cheese, 1 cup mozzarella, egg, spinach, salt, oregano and pepper. In greased 9x13" plan, layer 1 cup sauce, 3 of the noodles, and half of the cheese mixture. Repeat. Top with remaining noodles and sauce. Sprinkle with remaining 1 cup mozzarella cheese. Pour 1 cup water around the edges of the pan. Cover tightly with foil and bake at 350 degrees for 1 hour & 15 minutes. Let stand for 15 minutes before serving. Lasagna also can be assembled ahead of time and refrigerated until ready to bake. You can use homemade spaghetti sauce with meat or without, but our respondent advised, "It is delicious with a bought, bottled sauce--Prego is best, I think." This dish makes a really easy lazy-day dish and it's good for company too because it requires no tending. Makes 6 servings.

August 19 Meeting Minutes


Arlington Pacesetters Attendance: 17

Shirley Musick called the meeting to order. She led the invocation and presented the agenda for the evening. Shirley introduced all the guests and the program for the evening. She introduced the new member - Deborah Gallaway / business owner - Water From the Rock Resale Boutique in Arlington.
We began the meeting with a fun game of "Get to know your neighbor". When we arrived Adele Brautigam had our name tags ready with a small picture. We were to find the person with the matching picture, sit with that person, and ask questions; later we were to introduce that person and give what we were able to learn about said person.

Ginger McGill introduced the guest speaker, Carlene Post, a Massage Therapist. We were enlightened by the Presentation and information on how to choose a Massage Therapist and the technique that should be used. A $25 donation was presented in Carlene's name.

Next agenda item was the installation of the Vice President and the Secretary.

Shirley Musick gave the floor over to the other Board Members with information to give to members. Ginger McGill made suggestions for the April 13 Business Associate of the Year meeting to be voted on at the next meeting. Shirley Musick explained that we might want to expand our Associate of the year to the Company of the year.
Our October meeting will be to set the budget, goals, and awards for the year.

Treasurer's report was given and approved by Waunita Moore and seconded by Jean Widmann.
