We say good bye to Grandpa Laughlin (Maclachlan) passed away March 13, 2002 from a heart attack, and other possible ailments from diabetes.  I would like to take a couple moments to share some memories of him, and if you would like to send your memories that would be wonderful.

I should be rather embarassed to say this, but one of my funniest memories is when my son Adam was just over a year old, and grandpa came to visit that summer (I was also pregnant and nearly ready to burst with Aaron).  We bedded grandpa and Adam in the same bedroom, and one morning when I was searching for my little critter (you know how elusive they can be) I managed to open every door in the house without knocking first, and I caught grandpa in his underpants, t-shirt, and suspenders.  Instead of apologizing and shutting the door, I made a mad dash in my mothers direction (we had invaded her) and let her take the blame :)

That same summer is when I acquired my nickname "Goofy" from grandpa because I was due to have squirt number two at any moment all sensations that most hoped was labor was merely described as goofy.  I probably said that phrase a thousand times which stuck out in grandpa's mind, and he forever referred to me as such.

Here is a recipe he sent me, and the message attached to it.  It's a wonderful recipe, but let me share that when you beat eggs stiff it is best to get it mixed into the other ingredients in a timely fashion because they will reliquidfy.

GOOFY,,,,,This not just a great pie, it's a SUPER great pie!!!!!!



LEMON SPONGE PIE
MIX THOROUGHLY,
(1) 11/4 cups sugar,
(2) 2 tbsp flour,
(3) pinch salt,
(4) 1 tbsp butter.
ADD
(1) 2 beaten egg yolks,
(2) 1/4 cup lemon juice.
BEAT 2 egg whites until stiff, but do not add until after the milk.
ADD 1 cup milk. Stir all together, then fold in the beaten egg whites.
POUR into an unbaked pie shell and bake in a hot oven (450+ degrees) for about 5 to 10 minutes until browened.
REDUCE (open oven door) heat to 350 degrees and bake about 25 to 30 minutes more.

You'll make one the first time and then two, three or maybe even four thereafter. Gramps
