Mint Pancakes

By Streamtail

Ingredients:
2 c flour
2 tblspn baking powder
1/4 c sugar
2 large eggs
2 tblspn vegetable oil
1 1/2 c milk

1/4 tsp mint extract or crumbled mint leaves

Put all ingredients into a bowl and blend until smooth. Pour small
patties of the batter onto a frying pan. The batter is runny, so pour
them far enough apart so they don't combine. Cook on that side until you
see bubbles and then flip. Cook until both sides are brown.

This recipe is good to do at a campfire, but can work at home too.

1 roll of biscuits
1/2 stick of butter

Optional:
Cinnamon
Sugar
Brown Sugar

Melt butter in pan over stove. Take biscuits out, but do not cook them
fully. Brown them like you would a marshmallow. If you're at home, you
can ball up the biscuits and put them in a pan in the oven. Only heat
them at a low heat for a few minutes. Once they are done, roll them in
the butter. Then sprinkle sugar or cinnamon over them and eat. If you
don't want to sprinkle, put some in a pan.

Damson Jam

36 prune damsons
1 orange, quartered and seeded
sugar

Pit damsons, but do not peel. Put damsons and orange through medium
blade of meat grinder. Measure pulp into a large pot amd equal amount of
sugar. Cook over low heat and stir until sugar is disolved. Bring to a
boil, stirring occasionally for 10 min or until jelly stage. Pour in a
hot sterilized jar and seal immediately.
