INTRO
To make it easier, instead of listing every thing by category, such as Hidden Pokemon or Evolving pokemon, I'm listing everything by the coarse so you don't have to jump around for information. They are also listed in order of where they are, so what comes first on here comes first in the game. If you have all the supplies, (food, flute, pester balls) then you can do anything I have listed. If you don't, some of the things on here might help you to find the pokemon or gain the extra points you need to move on and get the supplies.
Tips: When selecting your pictures to show to professor oak, be sure to check for size and pose. You want the biggest picture of the Pok�mon, but keep in mind and make sure that you can see most or all of the Pok�mon in the picture. With poses, you want to make sure you don't take pictures of the Pok�mon from behind. You'll lose points. Pictures where the Pok�mon are looking strait at you get high points. If a Pok�mon is doing anything special or interesting, take a pic and see what you can get. Try to get other Pok�mon of the same kind in the picture. The more of the other Pok�mon you see, and/or the more Pok�mon in the pic will win you some more points. Eating pokemon are happy and can score you big points, so throw an apple every now and then at a pokemon.
Signs
Beach: when your ready to get the Pok�mon signs, this is where the beach one is. Right after the surfboard, turn around in the vehicle so that you're backwards. You should see a group of rocks on your right if your facing backwards. Focus your camera on them and snap pictures when it starts to click. The sign is Kingler.
Tunnel: To get the sign, you have to do some stuff. First, when you go into the first door, you should see pikachu and an egg. use the apples to get pikachu as close as you can to the egg. Play the poke flute and pikachu will do a thundershock. If it works right, the egg will get shocked and Zapados will come out of it. Zapados will charge up the plant.

Beach Coarse:
Lapras: You don't see Lapras first, but I have it in here now because it's a little hard to get a really good pic. What I do, is I'll get all the other Pok�mon first, and then go back to the beach just for Lapras. Lapras is always in the water on your right. Every time you see it, take 1 or 2 shots of it. Every time you see it in the water, if you take pictures, there should be more than one (up to 3) and each time they should get closer. If it works out right, towards the end of the coarse, right before Kangaskhan, you will see a Lapras come up very close to you and others in the back. It will be a nice pic.
Pidgey: Simple to get, so you should have no problem with getting a good pic. If it's your first time in the coarse, this is where Prof. Oak shows you how to work the camera.
Turn around so that you're looking backwards. The Pidgey will start cooing after a few seconds. Take a picture.
Points: 1250 for pose
Doduo: You have to pay quick attention to it. Right after the Pidgey, there should be an abandoned track on your left. Doduo comes sprinting out. Have your camera ready for a shot. If you have the turbo boost for your vehicle, after Doduo runs past you and into the rocks, speed up and turn around so that you're going backwards. Then Doduo should be making its way towards you. You'll get a better shot.
Pikachu: you can take some pretty good pics of Pikachu just the way he is. But for him surfing, you need the apples. If you lure him towards the surfboard using the apples, he should jump on it and pose.
Points: 1000 for special and another 1000 for pose ususally.
Butterfree: Ok, right after the surfboard, you should see a Butterfree. Be quick when taking pictures of Butterfree because it'll turn around.
Snorlax: Next, you should see a big blue and white Pok�mon sleeping. Make sure you are facing forward. If you don't at least have pester balls, you can't get him. Throw pester balls at him and he will wake up and scratch his stomach. This gets good points. If you have the flute, play it and he'll get up and dance. There are 3 different tunes, each one he'll dance differently to. Apples won't do a thing.
Meowth: it's easy to get a good close up pic of Meowth. Right after Snorlax, if you look up, you should see Meowth on top of a rock. He'll jump up and yell 2 times. If you have, throw a pester ball or apple and him as soon as you see him. He should faint. If you hit him soon enough, when you turn the corner, look to your right, and he should be there making faces. You can take some nice close up pics of him. Play the flute, and he'll dance. Throw an apple at him, and he'll sit down and eat it.
Scyther & 2 Pikachu:
this is probably the best part of this coarse for points, and the hardest. You need pester balls. Right after Meowth, you should see a bunch of tall grass on your left. A Pidgey and Meowth should come out. Then, you should notice something rustling around in the bushes. Throw a bunch of pester balls in the bushes as the leaves seem to make their way towards you, and you should see a Scyther immerge from it. Take some pictures. After you go just a little, you should see 2 Pikachu come out. They will go onto the tree trunk and start doing flips. If you can get a pretty close pic with both Pikachu in it, you can get a lot of points. If you have the PokeFlute, play it, and both Pikachu will do a lighting bolt. If you get a pretty close shot, you should get a TON of points.
Pikachu on stump Points: 1300 for special
+ Pikachu using thunder: 1300 for pose
Eevee & Chansey: After Scyther, you'll cross a bridge and go past some more grass and see Doduo and Meowth come out. You'll cross a little bridge, and on your left, you should see Eevee chasing a pink ball. Hit the pink ball with a pesterball, and Chansey will pop up. Play your PokeFlute for cute pic. Throw an apple at them, and Eevee will jump up and down. So will Chansey.
Kangaskhan: You will see Kangaskhan by a group of Flowers. Hit him with a pester ball and he'll turn around and growl at you. Play the PokeFlute, and he'll do some funny dances.
Those are all the Pok�mon in this coarse. As you go on, you'll see Meowth and Pidgey again.
After you go past Kangaskhan, you should see 2 Pidgey flying in front of you. As you go on a little bit, you will see Meowth by a nest. The Pidgey will use gust and you'll get some extra points for a pic of that.
Tunnel Course:
Pikachu: When you first start this coarse, you'll see Pikachu on your right. Take a picture of it. It should run a little bit. Take another picture and it should go further. If you do this right, Pikachu will jump on it and pose. This picture is called Pikachu on a Ball and has a special of about 600 points.
Electrode: There are Electrode all over this stage. The best pictures you can get of it are when it's exploding. To get this, throw an apple or pester ball at one. There are 2 that explode on their own. The very first one will blow up right before you enter the tunnel. There will be one rolling along into the tunnel before you and as you enter the tunnel it will blow up on your right.
Points for exploding: 1200 for pose
