Ingredients:
1 to 2 tablespoons olive oil
1 ½ lbs ground beef
3 large cloves garlic (crushed)
1 teaspoon salt
¼ teaspoon pepper
1 14 oz can pineapple chunks drained (reserve liquid)
3 tablespoons cornstarch
½ cup white sugar
½ cup pineapple juice
½ cup vinegar
3 tablespoons soy sauce
2 bell peppers, red, green, or yellow, chopped into medium chunks
Method:
Heat oil in frying pan.
Combine beef, garlic, salt and pepper. Form into meatballs and sauté until browned and cooked through. In a saucepan mix cornstarch, pineapple juice, sugar, vinegar, and soy sauce, stirring constantly, over medium heat until thickened (colour will deepen). Add a bit of water if it’s too thick. Add pineapple chunks and meatballs. Cover and simmer 5 minutes, 10 minutes prior to serving, add peppers and blend, heat and serve with wild rice.
