Sticky Pudding - Compliments of Dalvay-By-The-Sea, PEI
1 ¾ cups Pitted dates chopped (10 oz)
2 cups Water
1 ½ tsp Baking soda
2 cups All purpose flour
1 ½ tsp Baking powder
½ tsp Ginger
½ tsp Salt
1/3 cup Unsalted softened butter
1 cup White Sugar
3 Eggs
¾ cup + 2 tbsp Unsalted butter
1 1/3 cups Light brown sugar
1 cup Whipping cream
½ tsp Vanilla
In saucepan, dates and water , simmer 5 minutes. (use a blender to make sure this mixture is smooth) Remove from heat, add baking soda (will foam). Let stand 20 Minutes.
In a bowl add flour, baking powder, ginger and salt….set aside.
In Bowl, with an electric mixer blend flour and butter until fluffy. Beat in eggs 1 at a time…add flour mixture in 3 parts blending well. Stir in date mixture…blend well.
Pour into well greased pan.
Bake at 375 F, 35-40 minutes. An 8 inch pan is too small.
Set pudding in pan. In another pan with water half way up sides
Melt butter, add brown sugar. Bring to a boil. Stir in whipping cream and vanilla. Stir until thickened (about 5 minutes)
Serve warm over pudding.
