Quickbreads--Cornbread

Onion Cornbread or Muffins

1 cup Cornmeal
1 cup Flour
3 1/2 teaspoons baking powder
2 Tablespoons sugar
1 teaspoon salt
1 egg
1 cup milk
1/4 cup melted shortening
1 medium onion (medium diced)

Combine dry ingredients with wet ingredients; stir only until moist (lumps o.k.)
Pour into well greased 8 x 8 x 2 square baking pan.
Bake at 425 degrees for about 30 minutes or until knife inserted in center
comes out clean.  Let stand 5-10 minutes before cutting.
