Put a filet or steak of salmon in a plastic bag with 1/2 of a lemon's juice, about 2-3 tablespoons of good soy sauce & one garlic clove (crushed or minced). Marinate for about 20 min (any longer, and it will start to "cook" in the lemon juice). Take it out of the bag and coat both sides with black pepper (as much as you can take). Saute in a little olive oil... and there you go. You can also do this with halibut.

Yield: 4 servings
2 large egg whites
1 can 15oz of Salmon
1 cup bread crumbs
1/4 cup Scallions (or Onion) finely chopped
2 Tablespoons Lemon Juice
1 teaspoon Worcestershire Sauce
Preheat oven to 400 degrees.
Beat egg whites in medium size bowl. Add all remaining ingredients
and mix well.
Form into eight patties about 1/2 inch thick.
Place on a cookie sheet sprayed with Pam and bake 10-12 minutes (turn
once) until golden brown on both sides.
