Now to the back part of the head. There is a new little trick with mirrored Mapping coordinates to be learned here. By using Editable Mesh Sub-Object Face with "Ignore backface" OFF, you can select all of the sides, top and back of the head in one go then Apply a New UVW Map modifier. Note: remember to collapse the stack between each stage or when ever you need an Editable Mesh.
Then scale and move the coordinates into the work area of the map. See what's happened here, the left and right side of the head are already mirrored. The back and top of the head can just be stretched out later.
