Let's start with Acorn Squash. To make a nice supper, cut the squash in half, wash and clean out all seed and fiber and pack the squash with brown sugar. Take one or two nice sausage, (depending on the appetite of the persons you are feeding). Place the sausage on top of the half-squash and wrap in foil. Place in baking pan with a small amount of water in the bottom and put in an oven at 350 degrees and bake for one hour. Serve with a nice cottage cheese salad (recipe to follow) and green beans with almonds. This makes a nice Saturday night supper and dessert can be ice cream, or brownies or both. To make the cottage cheese salad, take one pint of low fat cottage cheese, 2 stalks of celery chopped, one large onion, (Vidalia, Walla Walla or any sweet onion) chopped, radishes, sliced, cucumber cut up in small pieces, black olives sliced in small pieces (for color you know) tomatoes, cut in small pieces, and I like to put in some nuts -- cashews, or peanuts or anything you have. Add one tablespoon of your favorite mayonnaise or salad dressing, mix together and serve on a lettuce leaf.
