Petes limey - beery Fajitas


recipe largely nicked from Chris Sammon!
 


Ingredients
1lb chicken breasts;
about hlaf pint of lager ( drink the rest! );
juice of four limes;
2 dried chillies;
1 clove garlic, crushed;
1 large onion, roughly sliced 
1 or 2 bell peppers, cut into strips;
2 mild green chillies, sliced lengthways;
1 tsp. cumin.

To Serve :
sour cream;
grated cheese;
condiment-style chilli sauce (eg. Encona )
8 flour tortillas

 

Method
Combine all the ingredients for the marinade ( lager, lime juice, dried chillies, garlic and cumin ) with the chicken and leave for at least an hour. Heat some oil in a pan or wok, and put fry the chicken with the peppers, onions and fresh chillies ( about 2 minutes, or until the chicken's cooked). Add some of the marinade and cook for a further 10 mins or until the peppers just start to soften. That's it! Serve with warmed tortillas, sour cream, cheese and chilli sauce. Delicious!
