On the course select screen hold the following buttons. Golden Gate- L and C left and C down.

San Fransisco- L and C down and C right.

Indiana- L and C up and C right.

After you enter your name in the high score screen push down. Scroll to the conveyor belt and hold left on the D-Pad... A head should roll around on a conveyor belt!
