Cod with Capers in Tomato and Herb Sauce
Ingredients
600 gms Frozen or
Fresh Cod Fillets
1 Tin of Chopped
Tomatoes
2 cloves of finely
chopped garlic
1 white onion,
chopped finely
Black and Green
Olives stoned.
Capers
1 tsp.Thyme
1 tsp.Oregano
3 tablespoon Extra
Virgin Olive Oil
Salt and Pepper to
taste.
Method
Heat the olive oil
in a pan.
Add the cod fillets
and cook on both sides for a few minutes.
Drain and place
aside in a warm dish
Fry the chopped
onion and chopped garlic until soft.
Add tomatoes to pan
and heat gently.
Add chopped green
& black olives and a few capers.
Add thyme &
oregano, salt & pepper according to taste.
When
sauce starts to thicken return fish to the pan.
Cover and cook until
the cod is tender.
Serve
Serve with fresh
green salad and new potatoes.
