Spicy Samosas

 

For the dough....

300g Plain flour

3 Tablespoons of Oil.... (vegetable , sunflower) but not olive oil

1 Teaspoon salt

1 Tea spoon fresh ground black pepper

1/2 Teaspoon Turmeric

Warm water

 

Method

Mix all the dry ingredients then the oil and last of all the warm water .

Only use as much water to make a good dough.

 

The meat filling.

1/2 Kg Lean mince... best is Lamb, but Beef can be used as well.

2 Teaspoons Powdered Ginger

2 Teaspoons Garam Masala (curry powder )

1Teaspoon Chillie Powder

1 Tea Spoon Coriander fresh ground or... a good handful of freshly chopped Coriander leaves

1/2 Teaspoon Turmeric

1/2 Teaspoon Salt

1 Clove of Garlic Crushed

1 Medium Onion finely chopped

100 gr Frozen peas

1 Teaspoon Lemon Juice

1 Small handful of finely chopped mint.

 

Method

Fry the onions together with the mince and garlic, when the meat has lost its pink colour mix all the spices together with a little water to make a paste add the paste to the meat stirring well.After about five minutes add the peas, coriander (if the coriander is fresh leaves if not add with the spices) and Mint. Cook for a further five mins the turn the heat off and cover to allow to cool down.

To combine the two.... make small balls of the dough and roll out until very very thin.

(The thinner the better)

You should have circles about the same size as a saucer.

Place about 1 Tablespoon full of the meat in the middle of each circle and then fold in half, fold again so that you get a semi triangle press the meeting edges together.

Warm some oil in a pan enough so that the Samosa's will be submerged under the oil.

Fry the samosas until light brown. Serve with lemon slices...
