Tigania (frying pan full)
Serves Two Large Portions
You will need
750g cubed pork (3cm cubes)
olive oil (alternatively sunflower oil)
1.5 cups of dry red wine
oregano
salt & pepper
Method
Cover the bottom of a large frying pan with the oil and heat until the oil starts to smoke.
Add the meat and cover, keeping the heat very high.
Turn the meat after about 5 minutes season with salt and pepper.
Leave it frying for another 5 minutes (still on high heat) and then turn again.
When the meat has browned all over pour the red wine over it.
Cover until the commotion in the pan settles down.
Remove the cover and (still on high heat)
Let the wine boil till it reduces to a slightly viscous mixture of wine and oil.
Turn the meat to douse the cubes well.
Sprinkle liberally with oregano and turn the meat again a minute before removing from the heat.
Oregano goes bitter if left to cook, so make sure it *is* only about a minute...
Serve
Serve immediately straight from pan with chips, rice or on its own.
