Chocolate Banana Brownies
- 4 tbl. cocoa powder
- 3/4 c. cool water
- 1 very ripe banana
- 1 c. granulated sugar
- 2 large egg whites
- 1 tsp. vanilla extract
- 1/4 tsp. salt
- 1.5 c. all-purpose flour
- Preheat oven to 350. Spray cake pan. Blend cocoa, 1/4 c. water, and
banana until smooth. Add sugar, egg whites,vanilla, salt, and beat until smooth.
Add flour and 1/2 c. water, beating until smooth, again.
Pour into pan and bake 20-25 minutes. Cool, cut, and store in fridge.

Blueberry Cobbler
- 1 qt. fresh, washed blueberries
- 2/3 c. sugar
- juice of 1 lemon
- 1 c. all-purpose flour
- 1 tsp. baking powder
- 1/4 tsp. each allspice and salt
- 1 tsp. cinnamon
- 1/4 c. oil
- 1/2 tsp.vanilla
- 1/2 c. lowfat milk
- 1 tbl. sugar
- Preheat oven to 400. Spread blueberries in greased(sprayed) dish.
Sprinkle with 1/3 c. sugar and lemon juice. Blend flour, allspice, cinnamon, salt, and baking powder.
Separately, blend oil, 1/3 cup sugar and vanilla. Blend both together, then add milk.
Beat until smooth, spread on berries, sprinkle with sugar, and bake20-30 minutes, until brown.
