Chicken Stir Fry

1/4 cup orange juice

1 1/2 tblsp cornstarch

1 lb boneless, skinless, chicken breasts(cut in strips)

3/4 cup chicken broth

1 1/2 tblsp soy sauce

2 1/2 tsp cooking oil

1 clove garlic minced

1 1/2 tsp ground ginger

1 1/2 cups snow peas (or green beans)

1 medium red bell pepper(cut into strips)

3/4 cup sliced green onion

1 cup frozen broccoli (thawed)

1 carrot thinly sliced

in a bowl mix orange juice and cornstarch add chicken and marinade in fridge for 2 hours

in a cup mix soy sauce and chicken broth (set aside) heat oil in fry pan(med-high heat) and add garlic and ginger (fry for 30 seconds) add chicken and stirfry for 3 minutes, add vegetables fry until crisp-tender (about 5 minutes) add broth mixture, heat and serve with steamed rice
