Low Fat Spiced Bran Muffins
1/2 cup molasses
2 Tblsp. honey
2 large egg whites
1/2 cup plain nonfat yogurt
1/4 cup 2% milk
1/2 cup wheat bran
1 cup whole wheat flour
1 1/2 tsp. baking powder
1 Tblsp. ground ginger
1 tsp. ground cloves
1/4 cup chopped walnuts
1/4 cup golden raisins
preheat oven to 350 degrees coat a muffin pan well with no stick spray warm molasses and honey in a saucepan until steamy remove from heat and allow it to cool in a bowl whisk the egg whites, milk and yogurt until well blended. Add molasses mixture and whisk. With a wooden spoon stir in the remaining ingredients. Spoon the batter into greased muffin pan and bake for 15 to 20 minutes (until a toothpick comes out clean) serve warm with jam or jelly
