Pineapple Slice
Base:
2 cups flour
1 cup margarine
2 Tblsp sugar
pinch salt
Filling:
1 can crushed pineapple
1/2 cup sugar
2 Tblsp cornstarch
1/4 cup cold water (dissolve cornstarch in this)
3/4 cup chopped cherries (add when the rest of the filling is cooled down)
Topping:
2 egg whites
2 Tblsp sugar
1/4 cup coconut flakes
blend base together until crumbly...press into lightly greased 9 x 9 baking pan bake in 350 degree oven for 20 minutes until golden brown
in a saucepan cook filling until thick stirring constantly allow to cool and add chopped cherries
spread over the crust
beat eggs and sugar until thick and spread over the filling
sprinkle with coconut and bake in 350 degree oven until a nice golden brown (watch it carefully)
