Swiss Chicken Cutlets (real nice)
2 thin slices (reduced fat) swiss cheese
4 chicken cutlets (1/4 inch thick)
2 tblsp flour
1/2 tsp pepper
1 tblsp butter or margarine
3/4 cup chicken broth
1/4 tsp dried oregano
cut each cheese slice in half placing 1 slice on each piece of chicken roll each cutlet like a jelly roll tie securely with string
on waxed paper combine flour and pepper, coat cutlets melt butter over medium heat add cutlets cook turning often,until golden about 4 minutes add broth and oregano to pan increase heat, bring to a boil, then lower to med-low temperature simmer until chicken is cooked and sauce starts to thicken slightly (10 -12 minutes) remove strings and serve chicken (goes well with rice)
