Vegetables Au Gratin

3 medium baking potatoes thinly sliced

1 medium onion sliced and seperated into rings

1 small zucchini thinly sliced

2 Tblsp. flour

1 tsp. paprika

1/8 tsp. cayenne pepper

1/2 tsp. ground black pepper

1/4 tsp. nutmeg

2 Tblsp. freshly chopped parsley

2 Tblsp grated parmesan cheese

12 ounces evaporated skimmed milk

1/2 cup grated cheddar cheese

In a greased baking dish layer the potatoes, onion rings,and zucchini,top with 1 Tblsp. of the flour and 1/2 of the other spices, sprinkle with 1 Tblsp. of the parmesan cheese. Add another layer of the vegetables and repeat the first directions. Then pour the milk over the entire dish and lightly sprinkle with paprika and the remaining parmesan cheese. Cover with aluminum foil and bake for 45 minutes in a 400 degree oven. Lower oven temperature to 350 degrees and remove the foil wrap, sprinkle with cheddar cheese and bake for an additional 15 minutes. remove from the oven and allow to settle for 10 minutes, top with fresh parsley and serve
