Sweet Potato Pie

(my own special recipe)

large eggs 1/4 cups sugar
Dash of salt tsp powdered cinnamon
1/2 tsp powdered allspice 1/4 tsp powdered nutmeg
pinch of chrused cloves two drops pure vanilla extract
1 tblsp melted butter coconut to taste (optional)
1 cup heavy cream
3 cups cooked mashed sweet potatoes 2 ready made grahm cracker pie crusts

Beat eggs well, add sugar. Add butter and vanilla. Mix in spices. Stir in coconut. Beat mixture until smooth. Add cream and mashed potatoes and mix thoroughly until mostly smooth. Turn into pie crust and bake in a preheated 350 degree oven for 1 hour or until firm.


Carrot Cake

1 1/2 cups sugar1/2 tsp salt
3 egg yolks 1/2 tsp nutmeg
1 cup vegetable oil1 tsp cinnamon
2 1/2 tblsp hot water1 cup grated carrots
1 1/2 cups flour1 cup chopped walnuts (optional)
1 tsp baking powder3 egg whites
1 tsp baking soda

Beat together the sugar, egg yolks, and oil along with the hot water. Sift together flour, baking powder, baking soda, salt, nutmeg, and cinnamon. Add the egg yolk mixture. Then add carrots and walnuts. Beat egg whites until stiff and gently fold into mixture. Bake in preheated 350 degree oven in a well greased pan for about 55 min. Let cool for 10 min before removing from pan.
