Basic Tomato Sauce
2 tbsp olive oil
1 small onion, chopped
1 garlic clove, chopped
400 g/ 14 oz canned chopped tomatoes
2 tbsp chopped fresh parsley
1 tsp dried oregano
2 bay leaves
2 tbsp tomato puree
1 tsp sugar
salt and pepper

1. Heat the olive oil in a saucepan over a medium heat. Add the onion and fry for about 2-3 minutes, or until translucent. Add the garlic and fry for 1 minutes.
2. Stir in the tomatoes with their juice, parsley, oregano, bay leaves, tomato puree and sugar. Season to taste with salt and pepper.
3. Bring the sauce to the boil, then simmer for 15-20 minutes, or until the sauce has reduced by half. Taste and adjust the seasoning, if necessary.
4. Remove the bay leaves and discard just before serving.
