You've picked your stationery background and you've written your message, but your text still doesn't have enough contrast to be legible - or the colors on the dropdown list just don't look good against the background.
There is a way to change the color of the font to anything you want.
It is not hard and after you have done it a few times you can get quite fast at it, even though it does take several steps.
After your message is written, click and drag to highlight the text (OR push cntl-a, OR go to edit/select all)
Now RIGHT click anywhere on the highlighted text Go to Font
Go to the drop down box with a color name listed near the bottom left
Drop down the box and scroll to the bottom until you find the word "Custom"
When the next window opens you can select any color from here - OR you can continue on to the next window by clicking on "Define custom colors"
Now you can click and drag the cursor in the multi-colored box to any color you wish. Click ok until you end up back in your message with the font now in the new color you have selected.
If it is still not quite right, just keep repeating the above steps until you find a color combination that you like.
OE5 difference:  
Instead of dropping down the box and finding the word "custom", just click the little icon of the paint palette. Everything else is the same.
