Ellie's Veggie Casserole
Prepare rice or pasta as usual. As the rice or pasta is cooking, dice carrots, celery, and onions. Brown onions in oil in a large pan. Saut� the carrots and celery with the onions (you want them still a little crisp).Add the strained can of corn. When the rice or pasta is done, add it to the pan of veggies. Be careful not to let the rice or pasta stick to the bottom of the pan! You may want to wait until the pan cools a little, first. Mix the veggies and the rice or pasta, then add the soup a little at a time, until all the pasta or rice is covered. If you need more liquid, you can add a little milk. Simmer on low heat for a few minutes. You should add the peas and chopped green onions when the casserole is almost done cooking. Season with pepper to taste.
* For a little variation, diced chicken or turkey may be added. |
