Burmese Chicken & Rice Soup

Ingredients..

I cup long grain rice 2 cups diced boned chicken meat 4 cloves garlic,crushed 1 onion, quartered 1 tbsp ginger,peeled & sliced 1 tsp ground black pepper 1 tbsp salt (or to taste) 1 1/2 cups clear chicken stock 3 quarts water 1 cup thinly sliced spring onion

Instructions...

1) Combine all the ingredients except the spring onions in a large saucepan and bring to the boil.

2) Lower heat to medium low, cover and simmer for 1 1/2 hours, stirring occasionally.

3) Serve garnished with spring onions
