Preparation
1. Position the rack in the center of the oven and preheat to 350 degrees
F. Lightly grease and flour a 9-1/4-by-5-1/4-by-2-3/4-inch loaf pan.
2. In a cup, blend together the cinnamon and 1 tablespoon of the sugar. Set
aside.
3. In a large bowl, blend together the remaining 1/2 cup sugar, the flour,
baking powder, chocolate and coffee powder. In a medium bowl, beat the egg
until foamy before beating in chocolate extract. Combine the two mixtures,
blending until the dry ingredients are moistened.
4. Scrape the batter into the prepared pan and sprinkle the cinnamon-sugar
mixture over the top of the batter. Bake for 45 to 50 minutes, or until a
cake tester or wooden toothpick inserted into the center of the bread comes
out clean and the top is golden. Remove from the oven and cool the pan on
a wire rack for 5 to 10 minutes before removing the loaf from the pan.
