Creamy Sardines on Toast

Ingredients...

4 oz unsalted butter 1/2 onion, finely diced 1 tsp thyme leaves 6 tbsps soft white breadcrumbs 3/4 pt double cream 2 small cans sardines, drained 3 hard boiled eggs, chopped salt and pepper

Instructions...

1) Melt the better over a medium heat. Add the onion and thyme and cook until soft but not brown.

2) Add the remaining ingredients and warm through, stirring to combine. Season.

3) Spread the mixture equally between four slices of toast and put under the grill until bubbling.
