Hot and Sour Pickled Prawns
Ingredients... 16 large cooked mediterranean prawns 1/2 yellow pepper, thinly sliced 1/2 medium red pepper, thinly sliced 1/2 lemon, thinly sliced 1 tbsp drained capers 5 fl oz light olive oil 2 fl oz cider vinegar juice of 2 limes small onion, thinly sliced 1 lvl tsp mustard powder 1 dssp worcester sauce 1 dssp tabasco sauce 1/2 lvl tsp salt black pepper 1 tsp white sugar sprigs of coriander and lime slices to garnish Instructions... 1) Peel and devein prawns.Put the prawns with the capers in a non metallic dish. Add the sliced peppers, onion and lemon. 2) In a bowl whisk together the oil, mustard, vinegar, lime juice, worcester and tabasco sauces. Season with salt, pepper and sugar. 3) Pour the dressing over the prawns. Cover and refrigerate for at least 48 hours,stirring occasionally. 4) Serve the prawns garnished with the coriander and lime and with plenty of crusty bread to mop up the marinade. |
