Prawn Cocktail

Ingredients...

2 lbs prawns in their shells 1 crisp lettuce, eg Cos 1 oz rocket leaves 1 ripe avocado pear 1 lime, divided into 6 wedges cayenne pepper SAUCE... 1/2 pt mayonnaise 1 dssp worcestershire sauce a few drops tabasco sauce 2 tbsps tomato ketchup salt and black pepper 1 dssp lime juice

Instructions...

1) If the prawns are raw, dry fry in their shells for 4-5 minutes until pink. Peel and devein the prawns. Put in a bowl, cover with clingfilm and keep in the fridge until needed.

2) Mix the sauce ingredients. Stir and taste to check the seasoning, then keep in fridge until needed.

3) When ready to serve shredd the lettuce and the rocket fairl finely and divide between six glasses. Peel and chopp the avocado into small dice and add to each glass. Top with the prawns and the sauce. Sprikle with cayenne and garnish with a lime wedge.

4) Serve with brown bread and butter.
