Vietnamese Prawn Toasts

Ingredients...

1lb raw prawns, shelled 4 cloves garlic, roughly chopped 6 spring onions, chopped roughly 1 tsp grated fresh ginger 1 tsp sugar 1 tbsp cornflour 1/4 tsp ground black pepper 1 tbsp fish sauce 1 egg white 12" long bread stick oil for deep frying

Instructions...

1) Process prawns, garlic, spring onions, ginger, sugar, pepper, fish sauce and egg white in a food processor until finely chopped.

2) Cut the bread diagonally into 1 cm slices and spread 1 tbsp of the prawn mixture on each slice.

3) Deep fry in batches in hot oil until lightly browned. Drain on kitchen paper.
