STRAWBERRY SHORTCAKE

STRAWBERRY SHORTCAKE
2 1/3 cups Bisquick Original baking mix
1/2 cup milk
3 tbsp sugar
3 tbsp margarine or butter,melted
HEAT: oven to 425 degrees. Stir ingredients until soft dough forms. Spread in one ungreased 8" square or round pan. Bake about 15 to 20 min or until golden brown; cool slightly. Serve with strawberries. Drop shortcakes; after stirring drop dough by spoonfuls onto ungreased cookie sheet. Bake 10 to 12 min or until golden brown.



PINEAPPLE DELIGHT
1 C. boiled rice
1 can crushed pineapple
whipped cream
Mix cooked rice and pineapple and chill for an hour. Whip cream and
fold in before serving. serves 6.



OLD FASHION FUDGE


OLD FASHION FUDGE
3 c. sugar
1 c. evaporated milk
1/2 tsp. salt
1 tbsp. cocoa (heaping)
1 tsp. vanilla extract
3 tbsp. butter
Mix sugar, salt, cocoa, milk in saucepan. Stir occasionally over
medium high heat and bring to a boil. Stir until it reaches 225
degrees on candy thermometer. (When dropped in glass of cold
water, candy should form firm ball.) Remove from heat and place pan
in cold water. Add butter and vanilla. Wait until temp goes down to
175 degrees. Stir vigorously until fudge loses its gloss. Immediately
pour onto greased plate. Set for 1 hour and cut into squares. Melts in
your mouth!



OLD FASHIONED LEMON SAUCE
OLD FASHIONED LEMON SAUCE
1/2 c. butter
1 c. sugar
1 c. water
1 egg, well beaten
3 tbsp. lemon juice (1 lemon)
1 lemon rind, grated
Combine ingredients in saucepan, cook over medium heat, stirring
constantly just until mixture comes to a boil. Yield: 1 1/2 cups.



APPLE BETTY
APPLE BETTY
3 C. bread crums
1/2 C. hot water
4 C. apples
1/2 tsp. nutmeg
1/2 C. brown sugar
1/2 tsp. cinnamon
Temp. 350 Time 45 minutes
Put crumbs in bottom of buttered dish. Alternate apples and crumbs in
layers with sugar and spices. Lastly add water. Cover and bake at 350
for 45 minutes. Serve with cream.
CUSTARD PIE
5 large eggs
4 cups whole milk
sweeten with sugar to taste
1 teaspoon vanilla
pinch of salt
nutmeg
Beat well together eggs, milk, sugar,salt and vanilla.
Put into unbaked pie shell. Sprinkle nutmeg on top.
Bake 350 degrees until firm.
Sorry but I have never put down the time it takes to cook.
You should be able to put a knife
in the middle, and the knife should
come out clear. Even when you put
the knife in and push it to the side a
little and it's watery and the knife is clean
it's done and not over cooked.
