 The DROVER'S DREAM

The Drover's Cook Project's Cook-House bistro style
The Cook-House Building philosophy

"The Drover's Cook  weighed fifteen stone,
He had one bloodshot eye,
He had no laces on his boots,
No buttons on his fly...
His pants hung loosely around his hips
Hitched by a piece of wire
They concertinered around his boots
In a way which you'd admire..."

- 1st verse, "The Drover's Cook"  Thomas John Quilty, OBE, 1887-1979

Q: What are the FUNDAMENTALS OF THE “COOK-HOUSE” DINING STYLE?

They are
1:   THE “COOK-HOUSE” BUILDING and its unique service features, which will include a camp-fire with a camp kitchen layout and will work extensively in camp ovens, surely Australia’s most authentic  and ethnic cooking style.  Along
with that, a farm-house or homestead kitchen will be the pretext for a chef’s kitchen.

2:   The “COOK-HOUSE” MENU, being 5 Principle Australian menu styles compiled together and located in an active circumstance which will spark off streams of fusion within that style.

Additionally, I will express...
3:  The “COOK-HOUSE” SERVICE STYLE - being `black iron service’, traditional or caricature-rustic staff uniforms,  an around-the-campfire seating arrangement and other features of the Cook-House  dining service experience.
