LEVELS
Super Smash Bros. Melee has all new levels combined with updated versions of the levels from the first game. Levels in Melee are said to have a lot more interaction, and graphical effects. Such as things moving in the backround and stuff like that.

I don't know about many levels, but some of them are:

UPDATED LEVELS

Some of the levels that have been upgraded from the N64 Super Smash Bros. game are:

Fox's Ship: Not sure if it will still be based in Sector X, but you can still fight atop the Great Fox.

Peach's Castle: Peach's Castle has been majorly updated, and now looks more like a castle.

Planet Zebes: Another level that's been given a big upgrade. It looks a lot color now, and more like a Metroid level.

Mushroom Kingdom: (The secret level from SSB has been given a huge upgrade, as well as new obsticles, such as horizontal laying pipes)

I'm not sure about any more levels that have been upgraded from the N64 Super Smash Bros., but I'm sure just about all of them have, especially the good and popular ones (Hyrule Castle comes immediatly to mind).

NEW LEVELS

Some new levels in Super Smash Bros. are:

Mute City: (F-Zero X . . . Most likely Captain Falcon's level). This is a VERY cool level. Every 30 second or so, a group of 30 machines (F-Zero X cars) come screaming around the corner, slamming into anyone who can't get out of the way quick enough.

Ness's Level: Ness now has a level. Not sure what it is (Probably Onett from EarthBound), but it looks like a city. You can even climb the buildings. The graphics are really good in this level, and the platforms practically blend into the backround.

Donkey Kong's Level: There's a level that looks like it's in the trees kinda, with wooden platfroms and stuff. Not sure if it is or not, but it looks like it's probably Donkey Kongs.

Ice Climber levels: I saw a pic of level that looked like it was probably for the Ice Climbers.

Nintendo has just announced that there will be over 20 new levels in Super Smash Bros. Melee. Combined with the levels from the original Super Smash Bros., there will probably be around 30 something total stages to fight on in the final game!
